Picture Post! Dogs and Egg Rolls!
Tonight for my daughter's Last Supper (leaves for OU for real tomorrow) she requested egg rolls. Now, we're not saying run to Panda Express and grab their egg rolls...no, she was talking about those my mother made when I was little. It is one of the few recipes I got from her before she succumbed to illness. So many amazing recipes lost, none written down. But this one I do have.
To make, one must have these ingredients.
six pounds of hamburger, cooked.
2 packages Mushrooms
2 cans bamboo shoots
2 cans sliced water chestnuts
1 giant can of cream of mushroom soup
1 can of chinese vegetables
2 packages of egg roll wraps
2 bunches of green onions
1 bunch celery
1 lb. of fresh bean sprouts
(for the sweet n sour, buy a fresh jar of apricot Simply Fruit and two lemons--you'll squeeze the lemon juice into a bowl, plunk the entire jar of apricot SF into it, stir it up really well until it is just the right measure of tart and sweet, then put it in fridge for later use)
cook the hamburger up in three skillets (lol)
saute the mushrooms and celery til tender
throw it all in a HUGE bowl (or two) and mix it all up reaaalll good, dash in some low salt soy sauce, yeah. Rock and roll and ready to go.
Yes, this makes alot. A WHOLE lot, but that is the point--you make tons, eat a bunch, give some away, take some to others (I took a bunch to my dad) and freeze the rest. Why? Because it is like making tamales. So time consuming and such a mess you don't want to do it again any time soon!
Then get BIG bunch of oil heating up on your stove, put on different shirt you don't mind getting splattered, get a big glass of water, throw everyone out of the kitchen including the dogs because cooking with oil is dangerous, and turn on the oven, heat to 350, then turn off cuz you will put your done ones in there to stay nice and hot until you can take them to the neighbors or your daddy. Or eat them all.
Okay first of all, I didn't realize I would lose a certain feature when I let this go back to a non paid account. Okay I figured it out. Growl.
The first thing one must do is amass the ingredients. The innards minus the beef:

The wraps:

The sauce stuff:

Then, one must chop all those veggies that need chopping:

And brown the meat, saute the mushrooms and celery:

Put it all together in big bowl:

And throw away all the empty stuff you don't need:

Take a break and talk to boyfriend and other friend on chat for a bit:

Go check on the dogs:

And envy them for awhile. Lazy mutts. Then decide okay, time to get cracking so you the great chef can take the first batch to your dad and make him happy because it reminds him of his first wonderful awesome wife, your momma, who was one hell of a woman and hated mauve (inside joke there). First thing you gotta do is start wrapping up the little devils. It is an art!
First, heat up your oil and while that is getting to the danger point, plunk a perfectly proportioned spoonful onto the first skin:

Then take a damp towel and wet all four sides so they will stick:

Then fold, one, two, three, roll...


VOILA!!!!

Then do it three to four more times!:

Then comes the fun part--throw them into the evil boiling vat of grease and listen to them scream!!!

And while they are cooking, roll more, then make the sauce:

Once nicely brown (watch for those ouchy spits of the grease! Kick the dogs out again!) take them out and put on towels to dry off:

Then put on plate and enjoy!

Then eat four more, be totally stuffed, and grow heartily sick of the whole process cuz you have about thirty more to make. Vow not to make them again for at least another two years because your whole kitchen is filled with grease, the house smells like egg rolls and you just want to take a shower.
And that is how you make my mom's egg rolls. They are delicious! And yes, LOL, well worth the trouble. Every two years.

get my roommate totry making them someday.I never would have thought Cream of Mushroom goes into eggroll. I guess that's the secret recipe, lol.

To reheat--preheat oven to 350, put them in for about 20 minutes. YUM!
I just tend to overeat these things. SIgh. Have you ever frozen the insides? I may just do that this time! I have too much!

We reheat ours in the microwave for a bit. ;)
Or I use the toaster oven for about 15 minutes. Depends on how many I use. :)
