Tonight for my daughter's Last Supper (leaves for OU for real tomorrow) she requested egg rolls. Now, we're not saying run to Panda Express and grab their egg rolls...no, she was talking about those my mother made when I was little. It is one of the few recipes I got from her before she succumbed to illness. So many amazing recipes lost, none written down. But this one I do have.

To make, one must have these ingredients.

six pounds of hamburger, cooked.
2 packages Mushrooms
2 cans bamboo shoots
2 cans sliced water chestnuts
1 giant can of cream of mushroom soup
1 can of chinese vegetables
2 packages of egg roll wraps
2 bunches of green onions
1 bunch celery
1 lb. of fresh bean sprouts

(for the sweet n sour, buy a fresh jar of apricot Simply Fruit and two lemons--you'll squeeze the lemon juice into a bowl, plunk the entire jar of apricot SF into it, stir it up really well until it is just the right measure of tart and sweet, then put it in fridge for later use)

cook the hamburger up in three skillets (lol)
saute the mushrooms and celery til tender

throw it all in a HUGE bowl (or two) and mix it all up reaaalll good, dash in some low salt soy sauce, yeah. Rock and roll and ready to go.

Yes, this makes alot. A WHOLE lot, but that is the point--you make tons, eat a bunch, give some away, take some to others (I took a bunch to my dad) and freeze the rest. Why? Because it is like making tamales. So time consuming and such a mess you don't want to do it again any time soon!

Then get BIG bunch of oil heating up on your stove, put on different shirt you don't mind getting splattered, get a big glass of water, throw everyone out of the kitchen including the dogs because cooking with oil is dangerous, and turn on the oven, heat to 350, then turn off cuz you will put your done ones in there to stay nice and hot until you can take them to the neighbors or your daddy. Or eat them all.
